Eggplant - Aubergine

A ripe eggplant or aubergine just picked from a farm garden and placed on a green kitchen bench with an old wooden breadboard or chopping board in the background. The nightshade Solanum melongena, also known as the aubergine, brinjal eggplant, eggplant, melongene, brinjal or guinea squash, is a member of the plant family Solanaceae. The plant bears a fruit of the same name, commonly used in cooking. As a nightshade, it is closely related to the tomato and potato. The fruit is botanically classified as a berry and contains numerous small, soft seeds which are edible, but have a bitter taste because they contain nicotinoid alkaloids; this is unsurprising as it is a close relative of tobacco.

Kaye Menner | Curly Kale

Curly Kale

A fresh bunch of curly kale. Curly leafed kale is probably the first thing that comes to mind when you think of kale. The bright-green leaves are sometimes curled so tightly it can be hard to chop them. This kind of kale tends to have a bright, peppery flavor that can become quite bitter. I purchased this bunch of curly kale to make some kale chips as I'd read they they were yummy and also rather healthy. I washed the kale, then cut out the main stems and chopped into say 1 or 2 inch pieces. Put them in a plastic bag with a good drizzle of olive oil. Hand held bag to seal and shook madly to cover all the kale with oil. Put on some baking paper in the oven for a short time till browning. YUM. I was surprised at the amazing flavor and crunch these healthy chips had.
